Cheesy Chicken Enchilada Skillet
Cheesy goodness is what this meal has going on! YUM-ME! It's full of flavor and we made the enchilada sauce instead of buying it. We had some extra flour tortillas and I didn't feel like making enchiladas and wrapping them, etc. Instead we cut the flour tortillas into strips and just added them to the meal. This way we could also make these a skillet meal instead of an oven meal. In Arizona it's just too hot to have the oven on so this works perfect and doesn't skimp on flavor.
We chose the Thrive seasoned chicken slices instead of the Thrive chopped chicken because the seasoned chicken slices are bigger pieces and work well with the meal. If you are restricting sodium, then choose the Thrive chopped chicken as it is not seasoned.
Thrive's freeze dried chicken is so easy and convenient because it's already pre-cooked. It's also cleaned and cut so it's a big time saver! I don't like getting ready to make a meal and I need to clean the meat, cut it and cook it even before I truly get started on the recipe. Thrive's freeze dried foods have cut my time in the kitchen easily in half and the foods taste great! Plus we don't waste because we use only the amount we need.

We didn't add black beans but you certainly can add a 1/2 cup to 1 cup of black beans if you'd like. If you're using Thrive instant black beans, I would suggest cooking them prior to adding them to the meal. You can add them near the end so they soak up some flavor. If you're using canned beans, add them any time. Either way, you may want to either increase the amount of enchilada sauce you made or add a little extra water.
Let's talk cheese for a moment. Not only does the enchilada sauce have cheese but then we add more cheese to the enchiladas. It's a cheese lovers paradise and oh so oooey and gooey. We used Thrive cheddar cheese and for this recipe we did refresh (rehydrate) it prior to using because I had the time. Many times when we use the Thrive freeze dried shredded cheddar cheese, we'll just toss it into the meal and melt along with cooking.
