Cheesy Chicken Enchilada Skillet

Cheesy Chicken Enchilada Skillet

Cheesy goodness is what this meal has going on! YUM-ME! It's full of flavor and we made the enchilada sauce instead of buying it. We had some extra flour tortillas and I didn't feel like making enchiladas and wrapping them, etc. Instead we cut the flour tortillas into strips and just added them to the meal. This way we could also make these a skillet meal instead of an oven meal. In Arizona it's just too hot to have the oven on so this works perfect and doesn't skimp on flavor.

We chose the Thrive seasoned chicken slices instead of the Thrive chopped chicken because the seasoned chicken slices are bigger pieces and work well with the meal. If you are restricting sodium, then choose the Thrive chopped chicken as it is not seasoned.

Thrive's freeze dried chicken is so easy and convenient because it's already pre-cooked. It's also cleaned and cut so it's a big time saver! I don't like getting ready to make a meal and I need to clean the meat, cut it and cook it even before I truly get started on the recipe. Thrive's freeze dried foods have cut my time in the kitchen easily in half and the foods taste great! Plus we don't waste because we use only the amount we need.

Thrive Life offers 3 freeze dried chicken choices. Not sure which one you want to use? Here's my video on Thrive chicken.

We didn't add black beans but you certainly can add a 1/2 cup to 1 cup of black beans if you'd like. If you're using Thrive instant black beans, I would suggest cooking them prior to adding them to the meal. You can add them near the end so they soak up some flavor. If you're using canned beans, add them any time. Either way, you may want to either increase the amount of enchilada sauce you made or add a little extra water.

Let's talk cheese for a moment. Not only does the enchilada sauce have cheese but then we add more cheese to the enchiladas. It's a cheese lovers paradise and oh so oooey and gooey. We used Thrive cheddar cheese and for this recipe we did refresh (rehydrate) it prior to using because I had the time. Many times when we use the Thrive freeze dried shredded cheddar cheese, we'll just toss it into the meal and melt along with cooking. It's easy to refresh freeze dried cheese and I have a video on it here.

Have you had freeze dried corn before? You're going to be amazed at the flavor! Thrive freeze dried corn tastes like corn right off the cob. It has that hint of sweet goodness and can take your mind to a picnic setting. The great thing is that eating freeze dried corn is way less messy than eating corn on the cob!

Freeze dried corn doesn't taste like canned corn or frozen corn. It has a unique taste and one that will have you snacking right from the can. Seriously, it is a fantastic snack if you're looking for something a little sweet but not sugar sweet. It's so snackably wonderful that Thrive actually has the freeze dried corn in Snackie bags for your convenience. These are great to take on the road, out hiking or camping too!

1. Add seasoned chicken slices, zucchini, peppers, onions, lime juice, water and enchilada sauce. Stir, cover and bring to a simmer for 5 minutes.

2. During this time, take 2-3 10" flour tortillas and cut or tear into strips. I kept mine about 1 inch wide by 2-3 inches long. I ended up tearing my strips and this doesn't need to be perfect since you won't see the definition when the meal is served.

3. Add in half the cheese and all the tortilla strips, stir and make sure tortilla strips are covered with sauce. Cover and simmer for 10-15 minutes and stir occasionally. If the water/sauce level is too low, add a little water as you don't want the bottom to burn.

4. Check to make sure the seasoned chicken slices are fully reheated and turn heat off, top with remaining cheese, cover and let sit 5-10 minutes.

5. Top with sour cream, avocado, lime and Thrive cilantro, if desired.

NOTE: If you decide to not refresh your cheese prior to making this, we suggest adding all of your cheese in during the first step. This will give it ample time to melt. Also, if you prefer to add in all your cheese during the second step where you add the tortilla strips in, you can do that too. This cuts down on the waiting time after everything is ready.

Ingredients for Enchilada Sauce

Directions for Enchilada Sauce

1. Add all ingredients in saucepan except sour cream and cheese. On medium heat simmer for about 5 minutes, stirring occasionally.

2. Remove from heat and add to blend until smooth.

3. Return to sauce pan and bring to a simmer, shut heat off and add sour cream and cheese. Stir until melted and then add to Enchilada skillet above.

NOTE: If you are not using refreshed cheese and use freeze dried cheese straight from the can, you will want to add this during step 1. It will take a little longer to melt and might be harder to blend. We refreshed our cheese prior to this step.
