Chicken, Cheese And Broccoli Wrap Meal In A Jar
If you've been following our blog, you know we love Meal In A Jar recipes! Not only are they tasty, but they are the ultimate in meal prep. You can make 10-16 jars and have enough meals in your pantry or food storage for a few months.
We make the Chicken, Cheese and Broccoli Wrap Meal In A Jar in a pint size mason jar. This will make 2-4 flour tortillas that are between 8 and 10 inches. We made ours pretty full and made 3 tortillas. You can double the recipe and make this in a quart size mason jar for family size or to have leftovers.
Our meal in a jar recipes are made with Thrive Life freeze dried foods. As you can see by the picture above, freeze dried foods look and taste (you'll have to trust me on that one) just like regular food. Why? Because they are regular food! The only difference is they are freeze dried.
Thrive Life's freeze dry process gently removes moisture and locks in nutrients, so your food stays naturally preserved instead of decaying on the shelf. Freeze dried foods are healthier because the vitamins and nutrients are locked in and your food stays fresh.
When you're using freeze dried foods, you just need to refresh (or rehydrate) the food prior to eating. This is a quick process and for this meal, we added hot water right into the mason jar, put the cap on and let it still for about 10-15 minutes. I would shake it up every 5 minutes or so. When using the seasoned chicken slices, I like to refresh on the longer size since they are larger pieces and take a little extra. You'll know they are refreshed when you go to cut them and they cut easily with a fork.
We used the Thrive seasoned chicken slices for this recipe. These are larger chicken pieces than the Thrive chopped chicken and they are also seasoned. You can see the difference between Thrive Life's three chicken types here.
We're using Thrive chopped onions in this recipe but if you have the Thrive onion slices, you can swap them out. We keep both on hand and you can see the difference between the two here. Whenever you're using freeze dried onions, they refresh quickly. When I'm adding them to a cold salad or meal, I just toss them in and they refresh when added. I haven't refreshed them separately in water because I don't see a need to. These are the perfect onions to have on hand because they are ready to use and you don't have to cut them.
Refreshing freeze dried cheese is easy. You can view my video here. Many times I will just refresh the cheese right in the meal we're making. That way I can just toss it in. In this meal in a jar recipe, we decided to keep the mozzarella cheese in a baggie and refresh before we made the meal. You can refresh freeze dried cheese in as little as a half hour.
Chicken, Cheese And Broccoli Wrap Meal In A Jar (Pint Jar)
Ingredients:
- 1 c. Thrive Seasoned Chicken Slices
- 1 c. Thrive Broccoli
- 1 teaspoon Thrive Chopped Onions
- 1/4 teaspoon Garlic Powder
- 1/2 teaspoon Thrive Italian Seasoning
- 1/4 teaspoon Paprika
- 1/2 c. Thrive Shredded Mozzarella Cheese, refreshed
- 2-4 Flour Tortillas (8-10 inches)
- Sour Cream
- 1 tablespoon Olive Oil (optional)
Directions:
To Make Jar:
In a pint sized mason jar, layer the first 6 ingredients. In a separate baggie add the mozzarella cheese, remove the air, roll bag and put into top of jar.
To Prepare:
Refresh cheese with 1-2 tablespoons water and refrigerate about a half hour. You can also do this overnight if you're preparing ahead.
Add enough hot water to jar to cover contents, shake and mix well. Let this sit 15-20 minutes.
While your food is refreshing in water, lay out tortillas and spread about 1 tablespoon sour cream on each. Drain mixture to get out as much water as possible. Add chicken and broccoli mixture to the center of the tortilla and sprinkle with cheese. Fold the top and bottom of tortilla and roll. You can choose to do this different ways and also just by folding each side and leaving the top and bottom open. The main thing is that you want to have a seam to "seal" when you put the tortilla in the pan.
In a frying pan, add olive oil and heat. The olive oil is optional as my pan doesn't require it to cook and make the tortillas golden brown. Either way is fine but don't put too much olive oil in the pan or your wrap will turn out greasy. Add the wraps, seam side down. Cover with a lid smaller than the pan so it can press them down. Flip after golden brown on one side and repeat on the other side. The cheese should also be melted by this time.

In the video I mention rolling top and bottom and then sides. You can wrap this anyway you'd like. We did it 2 ways. The first time just left the top open and the second way was just creating a seam when folding the two ends over each other. Have fun, be creative and eat it the way you want.
Can you make this meal NOT as a meal in a jar? Absolutely! If you're not into making meal in a jars, you can just take this recipe and make it. Just be sure to add enough hot water to cover whatever bowl you have your ingredients in and then drain before scooping into the tortilla.
