Meal in a jar recipes are my favorite! They are quick to make ahead of time and then available any time you're squeezed for time. Even during the pandemic, I still find myself grabbing the meals in jars out of the pantry to make because I don't have to prepare anything ahead of time.

Also, right now while I have extra time during the day, I'm making sure that I have all my meal in a jars done so when things go back to normal, we'll be ready. If it ends up that "normal" is further away than we think, I know I'll be prepared with quick, delicious meals that will be ready when I haven't though about what's for dinner ahead of time.

This meal in a jar recipe is using Thrive Life freeze dried foods. We're in love with these foods because it has taken the burden away of long prep times and cleaning, chopping and more clean up time away. I always have the ingredients I need for meals and don't have wasted food. I take the amount I need out of the can and that's how easy it is.

As with any of our recipes, you can always substitute different ingredients or leave out something. Example...if you don't like spinach you can either leave it out or substitute kale in it's place. If you have a picky eater in the house more than likely they won't even know you slipped them some spinach on the sly.

Freeze fried spinach and kale are also perfect for smoothies! They blend up so fine that your non-veggie eater won't even notice. 

We're using the seasoned chicken slices but any of Thrive's chicken (either the chopped chicken or grilled seasoned chicken) would be fine in this recipe. The seasoned chicken slices and grilled seasoned chicken have bigger pieces so you might want to break them up a bit ahead of time. If you're on a low sodium diet, then select the chopped chicken since that is not already seasoned.

Many times I will have the Thrive mozzarella cheese already refreshed in the fridge. With this recipe, you don't have to refresh it first. You can just toss it in and let it cook with your meal. If you want to top with additional mozzarella cheese, than I suggest you have some rehydrated or rehydrate it while you're waiting for your meal in a jar to be ready. Chicken Lasagna Skillet Meal In A Jar - Quart Size (4-5 servings)

Ingredients:

To Make Jar: Add all ingredients to a quart-sized mason jar except for the mozzarella cheese. Measure the mozzarella cheese and put in a separate plastic baggie. Make sure to remove as much air from the bag as you can. Roll and stuff into the top of the jar. Place lid on jar and store until ready for 3 to 6 months.

To Make Skillet: Remove baggie with cheese. Dump contents of jar into a skillet with 5 cups cold water. Bring to a boil, then simmer for approximately 10-15 minutes, stirring occasionally. If mixture becomes dry, add up to an additional cup of water as needed. Simmer until noodles are desired consistency. Let sit 5 minutes to thicken.

Make sure to remove as much air from the bag as you can. Roll and stuff into the top of the jar. Place lid on jar and store until ready for 3 to 6 months.

To Make Skillet: Remove baggie with cheese. Dump contents of jar into a skillet with 2 1/2 cups cold water. Bring to a boil, then simmer for approximately 10-15 minutes, stirring occasionally. If mixture becomes dry, add up to an additional cup of water as needed. Simmer until noodles are desired consistency. Let sit 5 minutes to thicken. 

Note: Regarding the serving size. If you try for 3 servings (pint), 5 servings (quart), we suggest you toss some extra noodles in.
