Chicken Fried Rice Meal In A Jar Recipe And Video
This tasty Chicken Fried Rice meal in a jar recipe is another great meal prep that you can make 10-14 jars ahead of time and keep them in your pantry or food storage area. It's so convenient to have these ready to go because it takes the hassle out of the "what's for dinner?" question.
We used Thrive Life foods for the meal in a jar because they are freeze dried foods and work great for meal prep. Once you start using them, you'll wonder why you haven't before.
I know this because that's what I thought! We're using the Thrive chopped chicken in this recipe so that it cooks in about 10 minutes along with the rice. Also, the chopped chicken is not seasoned and therefore is great for low sodium diets. This is why we state that you will want to add soy sauce to taste. If you're staying low sodium, stick with a low sodium soy sauce. If you have an ingredient that you don't like, just substitute one of the other ingredients in.

Chicken Fried Rice Meal In A Jar Recipe - Quart Size (4 servings)
Ingredients:
- 3/4 c. Thrive Life chopped chicken
- 1/4 c. Thrive Life spinach
- 1/4 c. Thrive Life onions (chopped or sliced)
- 1/4 c. Thrive Life zucchini
- 1/4 c. Thrive Life sweet corn
- 1/4 c. Thrive Life red bell peppers
- 1/4 c. Thrive Life mushrooms
- 4 tablespoons Thrive Life scrambled egg mix
- 2 c. Thrive Life instant rice (white or brown)
- Soy sauce to taste
To make jar:
In quart-sized mason jar, layer the first 7 ingredients. In a small plastic bag, add scrambled egg mix and add to jar. Seal.
In pint-sized mason jar, fill with instant rice.
To prepare:
Refresh scrambled egg mix with 6 tablespoons water, scramble in small frying pan breaking apart into small pieces. Set aside.
In large frying pan add remaining contents of large jar and add 6 cups of water and sprinkle with soy sauce to taste. Stir well, add rice and bring mixture to a boil on medium-high heat. Reduce heat and bring to a simmer until rice is tender. Remove from heat and cover. Let rest for 5-7 minutes.
Add scrambled eggs and serve.
