I could eat this cashew dijon sauce on just about anything! It's tasty and easy to make. This recipe is vegetarian and dairy free. If you skip the noodles or make zoodles, than you've got a delicious grain free recipe as well!

The cashew dijon sauce is easily made in a blender. If you don't have a high powered blender, you can either soak your cashews for a few hours or do speed up the process and boil them. I just add my cashews and water to the pot and let them sit in as it heats up. I boil for 5 minutes, drain and add them to the blender with the rest of the ingredients for the sauce.
You can customize this recipe by taking out any of the veggies. We used both angel hair pasta and cauliflower rice. You can use both or just one. As I mentioned above, you can also make zoodles. A little extra work but they also have premade zoodles you can buy and frozen zoodles.
Veggie Pasta With Cashew Dijon Sauce Recipe
Cashew Dijon Sauce Ingredients:
- 1/2 c. raw, unsalted cashews (we like this brand)
- 1/4 c. lemon juice
- 2 tablespoons nutritional yeast (we use this brand)
- 1 tablespoon dijon mustard
- 1 teaspoon minced garlic
- 1/2 c. water
All water and the rest of the ingredients to the blender or food processor. Blend until creamy.
Veggie Pasta Ingredients:
- Angel hair pasta (we used about a quarter diameter worth)
- 1 c. cauliflower rice (we used frozen)
- 1/3 c. Thrive zucchini
- 1/3 c. Thrive red peppers
- 1/2 c. Thrive asparagus
- 1/3 c. Thrive green beans
- 1/3 c. Thrive mushrooms
- 1/2 c. Thrive broccoli
- 1/3 c. Thrive butternut squash
- 2 1/2 c. water
Add all veggie pasta ingredients to pot, stir, and cover. Cooking on high heat for 5 minutes. Add cashew dijon sauce, stir and reduce to summer. Cover and cook and additional 5 minutes.
