Chicken Fajitas Meal In A Jar Recipe And Video
I am a huge lover of chicken fajitas but you know what's even better? When it's ready and waiting for me and I just need to dump it in a pan! That's the beauty of meal in a jar recipes. You can make 10-16 jars and just grab a jar out of your pantry or food storage area once a week and have this ready to go!

We make the pint size jar which feeds 2-3 people and the quart size jar feeds 4-6. As you'll see in the video, we used the white corn tortillas to keep this lower in sodium.
The pint size jar made 3 nice size chicken fajitas and we made 3/4 cup of Thrive refried beans while the chicken fajita mixture was refreshing. I filled the jar with water and then it was easy to drain as I could put my hand over the opening.
This is what is great about Thrive freeze dried foods, you just scoop out what you need. There is no way we'd eat a whole can of refried beans and this lets us just take what we want. Next time I'm pretty sure we could do a 1/2 cup. The instructions say to add salt but we don't add salt to anything so we skipped that. We did add some Thrive cheddar cheese and Thrive cilantro when served.
The beans only take 4-5 minutes to cook.
After you've refreshed your chicken fajita mixture, drain and toss into a pan with olive oil.
Cook until browned and get ready to serve! We put ours in the white corn tortillas but you can use any tortilla and toppings of your choice.

- 3/4 c. Thrive Green Bell Peppers
