Lemon Basil Chicken, Broccoli and Chickpeas Recipe

I love creating recipes packed full of flavor and this one won't disappoint your tastebuds! This can be made in one pot and those are my favorite. It's one of the reasons that I love Thrive foods so much. There's no chopping and washing which saves you time too. This recipe comes together under 30 minutes and includes orzo pasta!

You'll also want either a blender or food processor to make the sauce. I found a blender worked great so if you don't have a food processor or just don't want to drag it out, just pop the sauce in the blender.

Lemon Basil Chicken, Broccoli and Chickpeas Recipe

Ingredients:
 
1/2 can chickpeas
1/2 cup orzo pasta
 
For the sauce
1/3 cup feta cheese
2 tablespoons basil
1 teaspoon minced garlic or small garlic clove
1 tablespoon red wine vinegar
2 tablespoons olive oil
3-4 tablespoons lemon juice 
2 tablespoons water
 
Garnish
1-2 tablespoons Thrive chives
1-2 tablespoons Thrive parsley
 
Instructions
1. In a bowl, add warm water, Thrive Chicken and Thrive broccoli to refresh 15-20 minutes, stirring occasionally. This speeds up the meal because you can start boiling your water for the orzo and make the sauce.  
2. In a skillet, add water and bring to a boil. Add orzo pasta and cook according to directions. I find that 9 minutes is usually perfect. 
3. While your chicken and broccoli are refreshing, and your orzo is cooking, add all ingredients for the sauce into the blender. You do not need to refresh your Thrive chopped onions for the sauce. Blend everything together.
4. Drain your orzo and add back to the skillet with 1-2 tablespoons of water so it doesn't stick. I keep the skillet off the burner I was just using until everything is added.
5. Drain your chick peas, rinse and add to skillet.
6. Test chicken and broccoli to make sure it's ready, then add to skillet. Turn the heat on low and add the sauce and stir.
7. At this point you can serve immediately if you're short for time or cook on low for another 5-7 minutes to let the sauce sink into everything. 
8. Serve and top with Thrive chives and Thrive parsley.
 
This recipe serves 2.
 
If you want leftovers or to serve 4 double the recipe. With leftovers, I would have some extra lemon juice and olive oil on hand for reheating it. Add some water to the pan and adjust if you'd like more lemon. 
 
Since we LOVE lemon, we tend to add more. If you only want a slight hint of lemon, you can add less to the sauce and do a taste test as you blend.
